GUTH,NA MBAN . Easter or Simnel Cak;e 12 oz/300g Ranks Flour, Plain t tsp. Baking powder 1 tsp. Mixed spice 8 oz/200g Margarine 8 oz/200g Caster sugar 2 oz/50g Ground almonds 5 Eggs 2 tbsps. Spirits, optional Few .drops yellow colouring optional. 2 lb/1 kg Sultanas or Half sul ta~s, half raisins 4 oz/lOOg Halved cherries 6 oz/150g Chopped dates 4 oz/lOOg Mixed peel Grated rind of 1 orange and juice of t an orange 9"/23 cm Round Cake Tin Method: 1 Line the cake tin, bottom and sides with double brown and greaseproof paper. Prepare the fruit by washing, drying and halving the cherries, chopping dates and cleaning sultanas and raisins. Grate orange rind, squeeie and strain the juice. 2 Cream the margarine and sugar. Fold in ground almonds, orange rind and yellow colouring, if used. Lightly beat the eggs in a small bowl and add gradually beating into mixture. Towards the end add a little of the flour. 3 Sieve flour, baking powder and spice and fold in carefully using a tablespoon. ~i~ally stir in .prepared fruit and orange ,]U1Ce. Place 1n prepared tin and smooth the top. Bake middle oven shelf 3000F 150° , ., C., Gas Mark 2 for 3/Jt hrs. approx. Check at intervals after 2t hrs. and cover top with brown paper when sufficiently coloured. Cool in tin. Pour spirits over top ~nd wrap in greaseproof and brown paper unt1l required. =t::l ~ ~.'
